So this faucet has never had cold water (since I got the boat). The copper pipe had froze and expanded and it has been plugged in the bilge. I’m thinking I need a 1/2″ FIP at both ends? (It’s a faucet size connector in the bilge) In 7′ length?? Or what’s the best solution??

When I got my boat everything on it had froze the winter before. I gave up on trying to figure out the 3 or 4 different size and type of fittings and re-did the entire boat with pex and standard fittings.
Though looking at your picture again it looks like that is a 1/2 fip sharkbite fitting.
Put a barb on it and run rubber.
Pex it is the slickest invention since sliced bread.
Best solution is move south lol
